Peel the rind of the citrus and let dry on a tray in a single layer. The pith, the white lining of the skin, will be attached. Include it in the processing as it has many benefits including the ability to detox heavy metals from the body.
Let the rind sit until it feels fairly dry or is completely dry. If it is not completely dry, put the tray in your oven on low until the pieces are completely dry.
Next, put the dried rinds in a food processor and process to a fine grind. If you feel any moisture at all, put the ground peel back onto the tray and dry again in a low oven. Drying a little longer will give it a nutty flavor.
Cool and store in a glass jar in dry storage. Be creative, you’ll find endless uses for these flavorful, nutrient-rich bits.
